Although his roots are in the north of the country he has for many years been entranced by the south of the peninsula, devoting much of his time to studying the region and to defending a landscape that extends across cultural and historical habits to the most diverse ecosystems. He collaborates with the Institute of Nature Conservation, cooks in several contemporary projects, maintaining a close relationship with the producers and writing in their defense.
